Executive Chef Pascal Proyart comes from a long-established
family of restaurateurs in Brittany. Before coming to One-o-One in
1998, he spent a decade at a number of restaurants and hotels in
Europe, including the Sea Grill in Brussels and Le Divellic in Paris,
both of which have two Michelin Stars. He has established a
reputation as a celebrity chef on TV, and has won a number of
prestigious industry awards. He loves demonstrating his art, and
experimenting with new flavours and cooking techniques.
In addition to his love of seafood, he is a keen game-hunting
enthusiast, and this will be the focus of our evening.
We will meet at 6.00pm and sit down with a glass of champagne to
watch Pascal demonstrating the preparation of the dishes that we will
be eating later in the evening. Then we will move to the dining room
for a five course game-based menus, with matching wines.
The organizer attended a similar meal earlier this year, and it was
superb. The precise menu will depend upon what is available at
the time, but here is an indication of what we can expect.
