H Forman & Son
At the London Triennial Festival in 2018 one of the highlights was our visit to Formans of Fish Island. H. Forman & Son is a family business, one of the last – if not the last – traditional Smoked Salmon producers in London. They have been in production using the original cure since 1905, supplying some of London’s most iconic restaurants and, of course, Fortnum & Mason. They are located on the banks of the River Lea opposite the Olympic (now West Ham) stadium.
On Friday 5th July, starting at 11.00 am, we have arranged a tour of Forman’s smokehouse with a smoked salmon carving demonstration by their carving expert, Darren Matson. Lance Forman, Managing Director and fourth generation owner of the business, will be on hand to talk about the firm and the challenges of shepherding it into the 21st century. He will guide us through a tutored tasting of different types and cuts of salmon before we enjoy a two course lunch with a glass or two of wine.

Forman’s is housed in a architect designed building on the banks of the River Lea. It is salmon pink and shaped like a darne of salmon; instantly recognisable and not by any means like a conventional industrial building. Hackney Wick Overground station is some 10 – 15 mins walk away. Alternatively Stratford International Station (Central, Jubilee or DLR) is 25 mins walk. There is also a choice of Buses 276, 339, 488 all about 5 mins walk.
