IWFS EXCELLENCE AWARD FOR YOUNG CHEFS AT PILLARS

Members at London Branch lunched at Pillars, the training restaurant for catering and hospitality students at the University of West London in Ealing, one of the two top catering colleges in London.

The lunch was followed by the presentation of an IWFS Excellence Award to Pillars by Alan Shepherd, Chair of London Branch, under IWFS’s initiative of building relationships with catering colleges around the country, as part of our efforts to help support the next generation of hospitality professionals and to raise awareness of the Society.

We have held lunches at Pillars on a number of occasions. The modern ambiance is light and pleasant, and the quality of the food has always been superb.

We were treated to a welcoming glass of NV Idilicum Cava Brut, followed by a three- course meal with wine, and coffee.   The menu was:

Starter: Burrata cheese, chickpea fritters, artichoke and radish

Main: Grilled Atlantic pollock with wild garlic crust, gnocchi, charred sprouting broccoli, Vermouth cream sauce

Both Starter and Main were accompanied by Rioja Blanco, Marques de Reinosa.

Dessert: Crème fraîche panna cotta with orange and mint sorbet, blackcurrant gel
Accompanied by Sauternes, Le 2 de Romer de Hayo.

We were delighted to show our appreciation to the young chefs, who were very pleased to receive the Award. The certificate was immediately put on display.
