One thing that London Branch likes to do whenever it can is to offer experiences to its members that would not be accessible to them on their own. Pascal Proyart’s masterclasses are a good example.
Pascal is Executive Chef at the One-o-One restaurant in Knightsbridge. He was brought up in a family of restaurateurs on the coast of Brittany, and fresh seafood dishes are his passion. More recently, he has developed an interest in game, which he often shoots for himself. London Branch has been privileged to experience his Masterclasses in both genres.
We first gather in the kitchen with a glass of champagne, where we watch him prepare a selection of dishes, and sample them as he goes. He is a mine of information, and highly entertaining as well. Then we proceed to the dining room for a five course menu with matching wines. Pascal dines with us, explains the preparation of each course in detail while the sommelier tells us all about the wines. Highlights have included rare chamois and mouflon, king crab and live lobsters.
These events have been rated as outstanding, and we were delighted to present Pascal with the Society’s Restaurant Award on the most recent occasion.
