The Square is one of those elite restaurants possessing a Michelin star. Would we want to plump for anything less! Chef Clement Leroy from Chantilly, France, serves artistic dishes with inestimable flair, an evolutionary approach to modern haute cuisine. He was part of the team who helped Guy Savoy‘s eponymous restaurant win its third Michelin star in 2002 with whom he worked for ten years. His signature dishes include hand picked Devon crab with beetroot, iced coral, cardamom; John Dory with sea urchin and lychee.
Aya Tamura, his Japanese wife, presides over intricate deserts. Prior to her move to London she was head pastry chef in a long list of Michelin starred pastry kitchens across the world. An example is sweet white potato confit, gardenia, grapefruit, honey ice-cream.
We will start with a glass of sparkling wine and amuse bouche. This will be followed by a seasonal four course menu including cheese and dessert, and coffee with petit fours. Persephone, her daughter and grandson will choose the wines to complement the menu.
