The march of Peruvian food has been unstoppable since 2011 when uber-chef Ferran Adria decided that the country held the key to future gastronomy.
At the end of last year, there was another boost with superchef Alain Ducasse declaring ‘Peru will become the leading actors on the global culinary scene’. So here is the menu for our Peruvian evening:
Snacks Padron Peppers, Beef Short-Rib Croquettas,
Brown Crab And Yuca Churros
Sea Yellowtail Tuna, Xo, Yuzu, Ponzu, Pickled Potatoes,
House Seabass, Samphire, Radish, Sweet Potato, Hake Tamale, Chimichurri
Land ‘Duck On Rice’, Crispy Lamb Belly, Jalapeno,
Miso, Pollito A La Brasa, Lemon Thyme Salad
Soil Miso-Cured Carrot, Red Quinoa, Peruvian Kimchi, Fried Aubergine,
Smoked Yoghurt, Pecans, Plantain, Yacon Syrup, Feta, Black Olive
Sweets Aji Truffles & Fig Alfajores
We will start with ‘Pachapapa Cocktail’ – Barsol Quebranta Pisco, Fresh Lime, Yacon Syrup, Ginger And Apple.
White and Red Wine will then be served throughout the meal.
